How to turn over-ripe berries into a brilliant little cake

Turning overripe berries into a great cake is a great way to reduce food waste and create a delicious treat. Here's a simple recipe for turning overripe berries into a wonderful cake: 

 1 cup overripe berries (such as strawberries, raspberries or blueberries) 
 1 ½ cups all-purpose flour 
 1½ tsp baking powder 
 ¼ teaspoon of salt 
 ½ cup unsalted butter, softened 
 1 cup granulated sugar 
 2 large eggs 
 1 teaspoon of vanilla extract 
 ½ cup of milk 
 powdered sugar (for dusting, optional) 

 Preheat the oven to 175°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper. 

  In a medium bowl, combine the flour, baking powder and salt. To set aside.  In a separate large bowl of an electric mixer or by hand, beat the softened butter and granulated sugar until light and fluffy. 

 Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. 

Add the flour mixture little by little to the butter mixture, alternating with the milk. Start and finish with the flour mixture, mixing after each addition until just combined. Be careful not to over mix. 

 Carefully mix the overripe berries into the batter, being careful not to crush them completely. Juice is released from the berries, which adds moisture and flavor to the cake.

 Pour the batter into the prepared cake pan and spread  evenly.  
 Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. When the cake is ready, take it out of the oven and let it  cool in the pan for 10 minutes. Then transfer  to a wire rack to cool completely.  

 Optional: Dust the top of the cooled cake with powdered sugar to add sweetness and texture. 

 Slice the cake and serve  as a nice treat with a cup of tea or coffee.

1. Preheat the broiler. Toss the cauliflower, poblano and scallions with the vegetable oil, chili powder, cumin and 1/2 teaspoon salt on a rimmed baking sheet; spread in a single layer. Broil until the vegetables are browned around the edges, 7 to 10 minutes.
